Dr. Jenny Van Hook named Roy C. Buck Professor of Sociology and Demography
Van Hook and her students are currently developing new measures of immigrants' food environments and will use these measures to better understand how local food environments impact immigrants' eating behaviors. This is important because immigrants often arrive in the United States with healthier diets than a typical American diet. However, their diet quality tends to decline over time, particularly among children, and these changes are often responsible for health declines later in life.
